When I run the boinc ps3 grid, I only show one application running, and one waiting to run. Even in the messages section, it lists one processor. Is this normal? Should I be showing a process running for each separate SPE, or this as it should be?

Yep this is normal...
You don´t see the SPE´s in the BOINC Manager like with a Dual- or Quadcore.
